Chicken Parmesan

This is a wonderful, classic recipe for Chicken Parmesan.  Serve it with spaghetti, tossed salad and crusty rolls for a delicious meal.

10 boneless chicken breasts
2 eggs, slightly beaten
1/2 t. salt
1/8 t. pepper
Italian seasoned bread crumbs
1/2 c. oil
2 c. tomato sauce
1/2 c. freshly grated Parmesan cheese
8 oz. Mozzarella cheese

Place chicken breasts (shiny side down) on cutting board, pound lightly.  Combine egg, salt and pepper.  Dip chicken in egg mixture, then bread crumbs.  Heat oil in large skillet.  Brown chicken quickly on both sides.  Place in greased casserole dish.  Spoon tomato sauce over chicken and add Mozzarella cheese.  Add more sauce and top with Parmesan cheese.  Bake at 350 degrees for 30 min.
