Mother's Cheese Ball

My mother always made this cheese ball at Christmas.  Most people are stumped as to the ingredients, often guessing seafood for the pineapple!

2  8 oz. pkgs. cream cheese
1  8 ½  oz. can crushed pineapple, drained
2 c. chopped walnuts or pecans, divided
¼ c. finely chopped green pepper
2 T. chopped onion
1 T. seasoned salt

In medium bowl, with fork, beat cream cheese until smooth; gradually stir in crushed pineapple, one cup of chopped nuts, peppers, onions and salt.  Shape into two balls.  Roll balls in the remaining cup of chopped nuts.

Note: This freezes fairly well.  Simply freeze the cheese ball before rolling in nuts.  Before serving, thaw in refrigerator, then roll in nuts.
